An average of 400 cows are slaughtered daily at the city slaughterhouse, located in the Cuba neighborhood. Sometimes that number exceeds 450.
A complex of 100 meters wide brings together 120 people. Slightly less than half is linked to that site, where the animals come walking in and leave as a great piece of meat hanging from a hook.
“For us, this place is like an operating room,” says Josefa Cevallos, a veterinarian who works in the slaughter room, a large space where the animals get into seconds after passing through the knockback are.
With multiple gun shots with a 18 centimeters long steel needle, thick as a pencil, animals are given the ‘knockout’ in this room.
