Only national products for the menu of the special guests

The new government wants to spread the national gastronomy around the world, for that reason the request of the future president Lenin Moreno was that the lunch he will offer to the international delegations that will attend his inauguration will be made with purely Ecuadorian products.
The menu of tomorrow will in charge of Research Chef Carlos Gallardo de la Puente, considered one of the best in the country. He told this newspaper that he will also take part in the government’s expansion project of national cuisine.

Entry
White shrimp, tuna and Andean trout with babaco, marinated in mint and white roses in cold tree tomato soup (gazpacho) with roasted Muesli rain, sweet potatoes, fried beets and chili paper.
Main course
Coot breast in callampas and ishpingo sauce with mashed green bananas presented in three different textures. Fresh mango salad, baby lettuce and cherry tomatoes with passionate caramel.
Dessert
Spongy chocolate fine scented sphere with bananas bathed in a mortiño, blackberries and red roses of Tisaleo coulis with crystals of taxo caviar. All accompanied by a variety of pieces of bread filled with Ecuadorian nuts, almonds, blackberries, mortiños and fine cocoa butter.
