Foresta, in Quito
Foresta is an initiative of chef Rodrigo Pacheco, it is located in the La Floresta neighborhood, traditional in the capital of Ecuador and is described as a restaurant with sustainable cuisine.
In the National Geographic publication, it was written:
“Like a greenhouse in the artsy La Floresta neighborhood, chef Rodrigo Pacheco’s Foresta showcases the country’s immense biodiversity.
Seasonal dishes on a changing menu are made with native produce like passion fruit and chicle (known as sapodilla or medlar), many of them grown in Bocavaldivia , Pacheco’s decade-old restaurant and reconstruction project. and cooked on a heated slab of Tungurahua volcanic rock.”
