Encebollado is among the 100 best soups in the world
Taste Atlas, a famous culinary guide, has released a list of the 100 best soups in the world and our encebollado is ranked 25th.
It is the Ecuadorian dish with the highest rating, 4.5 stars; followed by the fritada with 4.1 and the fanesca with 3.9. In addition, it is among the top 10 saltwater fish dishes in the world, ranking eighth.
In the description of the dish its usefulness in curing hangovers is mentioned. It is also mentioned that its origin is on the Ecuadorian coast and the fishermen made the soup out of necessity.
The international portal points out the ingredients and the preparation used: “the dish is prepared with fresh tuna meat, cassava root, tomatoes, onions, coriander and various spices.
