Traditional fanesca is already eaten in Guayaquil
In a place called Café D’Chely, located in the sector of Sauces 8, form Palm Sunday the fanesca is being prepared, with a touch of Amabto, and is promoted through a board that says “A dish of fanesca for $3 and for $5 a terrine”.
“My mother-in-law who is from Ambato taught me how to prepare it. In addition to the usual 12 grains, cod and vegetables, I garnish it with white cheese, egg, chunks sweet plantain and fried balls of flour. That is our special touch”, explains Graciela Riofrío, owner of the restaurant, who sells this typical dish of Holy week for five years , and that between Sunday and yesterday has sold around 100 dishes.
On the other hand, the restaurant located in Guaranda and Francisco de Marcos, is recognized by the sale of colada morada, and a month ago started to offer fanesca prepared with barracuda fish with a value of $3.50.
“The barracuda is more fleshy, less prickly and does not fray. 14 different grains are used, also egg and peanuts are used in the preparation and decoration”, said Elena Naranjo, owner of the place.
Other places located in the center of the city, as well as the restaurant “Meals of Victor”, located at the Alborada sector, inform their costumers through boards that from Friday they will join list of places that sell this dish.
